If a 6-year old child does not like the taste of ibuprofen, is there some other anti-inflammatory that tastes better and would have the same beneficial effect? I assume a gel would not give the same effect, since the gel gives more local effect to where it’s applied?

The gel is not going to work. Unfortunately, there are not exact equivalents to Ibuprofen. You could use Ibuprofen tablet, crush it and then mix in food.
